Let me tell you why. Nasi is a Malay term for rice and kerabu means salad. The interesting part is the rice is soaked and cooked with the purplish blue extract from bunga telang or also knows as butterly pea and this is the main reason why the rice is blue in color.
Therefore, for foreigner visitors or people who did not try nasi kerabu before, it will be a shocked for you when you come across rice with purplish blue color in restaurants. However, swipe that off, it is not artificial color but it’s all natural ingredients used to make this unique dish. When you’re scooping the rice into your mouth, there is a slight unique fragrance of the purplish blue butterfly pea.

For the kerabu (salad), any vegetable or edible leaves such as daun kesum (Vietnamese mint), cucumber, long beans, bean sprout and daun kadok (betel leaf) can be added. But in Malaysia, it is normally served with salted fish, beef rendang or friend chicken. For foreign visitors and people who did not try this dish before like you, it is a must-try dish when visiting Malaysia. Do not worry that this dish is not available in other states but only Kelantan because nowadays it’s available throught the whole Malaysia. You can find it from most of the Malay restaurants and haute dining places in hotels and resorts.
