
Fish ball noodle, is a dish of Chinese origin in any hawker stall or chinese restaurants. This dish is available in soup or dry versions. There are many various type of fishball noodles in the region. In Malaysia, even a rainy, cold or hot day, fishball noodles normally consumed by Malaysian as a dish is simple combination of noodles, soup and fish balls with fresh spring onions. More than that, Fish ball noodle is very famous in other country especially in Singapore.

However, in Singapore and Malaysia, there are many ways of cooking fish balls. It can be served with soup and noodles like Teochew style. In addition,the fish ball noodles also can be served with noodles called ‘mee pok’. ‘Mee pok’ is one of chinese noodle dish that are yellow appearance and thickness. This dish is Teochew origin and served in few of countries especially in Singapore and Thailand. The meaning of ‘Mee pok’ is dry. Normally ‘Mee pok’ will add with meat and vegetables on top.

Fish ball noodle soup is prepared with anchovies, fish balls, fried bean curd, fried pork lard oil with garlic and pepper. Besides, dry noodle with fish ball is served with oyster sauce, chili powder, sesame oil, ketchup, sliced fishcakes, fish balls, prawns, beansprouts, ‘mee pok’, lettuce leaves, fried shallots and spring onions as garnish.
To make smooth, tender and yummy traditional fish balls, the best choices are fish with less bones and more glutens. Normally, shark, eel and mackerel are the most suitable for making fish balls. Many stalls usually use ceramic spoon to scrap and separate the fish meat from its skin and bones. Nowadays, most of stalls choose to depend on commercial made supplies except only few of stalls who choose to make handmade fish balls without artificial preservatives.

In Sandakan, Sabah, there is a restaurant called ‘Leong Kee Fish Ball’ served sumptuous fish ball noodle soup. Their fish ball made fresh with dried mandarin orange peel. Besides, they also served with fish ball century egg dumpling.
